How To Blanch Almonds:
Put raw, unsalted almonds in boiling water for about a minute, or until the skins start to separate from the nuts and puff up. Take them out and put them right away in a bowl of iced water. Rub each almond between your thumb and index finger to get the skins to come off. Almonds should be spread out on paper towels to soak up any liquid. Let it dry before using it. If you need to speed up the drying process, you can spread almonds out on a baking sheet and put them in an oven set to 180 degrees for about 5–10 minutes, until they are dry but not toasted.
